Pork Belly Sliders
For the pork:
2 lbs. pork belly
1/4-1/3 cup Notorious P.I.G. Seasoning, or another pork seasoning
For the slaw:
2 cups shredded cabbage
1/3 cup pineapple
1/4 cup pomegranate arils
1/3-1/2 cup mayo
1 tsp. dijon mustard
1 tbsp. apple cider vinegar
salt and pepper to taste

Season the pork belly generously and leave overnight wrapped in the fridge. Preheat an oven or a roaster oven to 250 degrees. Place the pork on a rack in the oven and let it slowly cook until it has reached an internal temperature of 195 degrees to 205 degrees. This took about 8 hours.
While the pork is cooking make the coleslaw. Start by whisking the mayo, mustard, vinegar, and salt and pepper together to make the dressing. Add in the cabbage, pineapple, and pomegranate. Coat well. Set the slaw aside to marinate while the pork finishes cooking.
Once the pork is done allow it to rest for 10-20 minutes. Slice it into pieces that will fit your slider or hamburger buns.
Layer the pork belly on the bun and then the slaw. Enjoy!
