Hawaiian Meatballs
For the meatballs:
2 lbs. beef
1/2 cup gluten free breadcrumbs
1 egg
1 tsp. garlic powder
1 tsp. fresh ginger
salt and pepper to taste
For the sauce:
20 oz. can pinapple tidbits with juice
1/2 cup brown sugar
1/3 cup gluten free soy sauce
1/4 cup vinegar
2 tbsp. cornstarch
Mix all the ingredients for the meatballs together in a bowl by hand. Form the meat into 1 inch balls. Brown them in a skillet. Remove and set aside once they are all seared.
In the same pan add in the pineapple juice, brown sugar, soy sauce, and vinegar. Mix 2 tbsp. of cornstarch with a splash of water to make a corn starch slurry. Add it to the sauce and let it simmer until thickened.
Add the thickened sauce to a crockpot. Add in the meatballs and coat them with the sauce. Allow them to cook on low for 2-3 hours. Enjoy!
