Chorizo and Steak Freezer Burritos
2 lbs. chopped stir fry beef
1 lb. chorizo
20 gluten free tortillas (I used Mission)
1 1/2 cups cheese of choice (I used Dairy Free VioLife Mozzarella)
1 1/2 cups salsa.
1 15oz. can refried beans
In a large sauté pan cook your chorizo and beef. When it is done, set aside and allow it to cool for 30 minutes.
When the meat is cooled prep your burrito making station. Place all ingredients in prep bowls. This is the order that worked for me; beans in the bowl, next to the meat, next to the cheese, next to the salsa. Place a tortillas on a plate, on one half spread the refried beans, top with the meat, sprinkle on some cheese, and scoop on some salsa.
Roll the tortilla like a burrito and repeat until everything is used up.
Heat a nonstick pan and seal the burritos on the seam and let the tortillas brown a bit.
Individually wrap the burritos in foil and place in a ziploc bag in the freezer.
When you are ready to reheat, place in the airfryer at 400 for 2 minutes or the microwave for 3 minutes.
