Freezer Ready Fried Rice

3 lbs. ground pork (or any protein of your choice)

6 cups frozen peas and carrots

4 1/2 cups dry white rice

9 cups of water for the rice

3 large yellow onions, diced

2 bunches of green onions, chopped

1 cup of soy sauce

6 tbsp. sesame oil

6 tbsp. minced garlic

6 tbsp. minced ginger

In a large pot or rice cooker place your rice and water. Cook until the rice has fully absorbed the water.

While the rice is cooking use a large wok or pan to brown and cook all your pork. Once the pork is cooked set aside.

In the same pan you cooked your pork, use the pork fat to sauté the yellow onions. Once they are soft, add in the frozen peas and carrots and allow them to thaw and warm through.

While the vegetables are cooking, whisk the soy sauce, sesame oil, garlic and ginger together.

Take the cooked rice and pour it on top of the sautéd veggies. Top with the soy sauce mixture and mix until the sauce is fully combined with the veggies and rice. Add in the pork and mix throughout the rice and veggies evenly.

Take the rice off the heat. Add the green onions and mix throughout the rice. Let the rice cool completely and divide evenly into 6 freezers bags.

To reheat, allow the rice to thaw and place it on a baking sheet in the oven at 450 degrees for 20 minutes to get crispy fried rice. Enjoy!
