Sweet Potato Beef Taco Street Corn Bowls
For the Beef and Potatoes
1 lb. ground beef
1 packet of taco seasoning
1 large sweet potato
salt and pepper to taste
avocado oil
1/2 cup pickled red onions
For The Street Corn Salad:
1 1/2 cups corn
1/4 cup cilantro, chopped
3 tbsp. mayo
1/4 cups green onions, sliced
1 tbsp. lime juice
1/2 cup cotija/feta
1 tbsp. jalapeño minced
1/2 tsp. chili powder
Microwave your sweet potato for 8-10 minutes until it is fully cooked and easy to cut into cubes. Cut the sweet potato into cubes and add avocado oil and salt and pepper. Air fry the cubes of sweet potato for 15 minutes at 400 until crispy. Or cook them in the oven at 450 for 2o minutes until crispy.
Brown and fully cook your ground beef in a pan. Mix in the taco seasoning toward the end of the cooking process.
Mix together all the ingredients for the street corn salad in a small bowl and set aside.
To assemble the bowl add sweet potato, beef, pickled onions, and street corn salad. Enjoy!
