Shrimp Po Boys

For the sandwich:

half a long hoagie roll (I bought one from Jersey Mike’s)

20 Trader Joe’s Gluten Free Bread Shrimp (cook according to bag)

1 beefsteak tomato

1 cup lettuce

For the remoulade:

2 tbsp. yellow mustard

1/2 cup and 2 tbsp. mayonnaise

1 tsp. prepared horseradish

1/2 tsp. large clove garlic, minced and smashed

1 1/2 tsp. sweet paprika

1 tsp. Old Bay Seasoning

In a bowl mix together all the ingredients for the remoulade. Cut your bread in half. Spread on a generous amount of the remoulade. Layer on the the lettuce, tomato, shrimp, and more remoulade. Put on the top of the sandwich and cut in half. Enjoy!

*I used an Udi’s Sub Roll and Trader Joe’s Gluten Free Breaded Shrimp.*
