Oven Red Curry Ramen

4 Rice Ramen Bricks

2 tbsp. Peanut Butter

1 tbsp. Red Curry Paste

1 tsp. Minced Garlic

1 tsp. Grated or Minced Ginger

1 tbsp. Gluten Free Soy Sauce

1 tsp. Sesame Oil

1 Can Coconut Milk

1.5 Cup Chicken Stock

for garnish, chive and chili oil

Preheat oven to 350 degrees.

In a medium baking dish 9 x 13, whisk together: peanut butter, red curry paste, garlic, ginger, soy sauce, sesame oil, coconut milk and broth until smooth.

Add ramen bricks and press them into the liquid.

Cover tightly with foil and bake for 30-35 minutes, until the noodles are fully cooked.

Remove foil, gently stir to loosen noodles.

Add in your favorite proteins like soft boiled eggs, shrimp, chicken, beef, etc.

Top with chives and chili oil.
