Quick Crispy Chicken Caesar Salad
For the dressing:
1 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 teaspoon black pepper
1 tablespoon lemon juice
2 cloves garlic grated
1 tablespoon olive oil
⅔ cup Parmesan cheese grated
2 –3 tablespoon water to thin if needed
For the croutons
1 cup cubed bread
1-2 tbsp. olive oil
salt and pepper to taste
For the salad:
6 cups chopped romaine lettuce
8 Perdue Gluten Free Chicken Tenders
What makes this quick is doing everything in the air fryer. By the time you make the dressing everything else is done.
In a small bowl add the cubed bread. Add enough olive oil to evenly coat the bread cubes, and add salt and pepper. Place in the air fryer for one minute at 400 degrees. With the preheat and the minute long cook the croutons will be perfectly crispy. (If you don’t have an air fryer place them in the oven for 15-20 minutes at 400 degrees until they are golden brown and crispy.)
Once the croutons are done, set them aside and add the chicken tenders to the air fryer at 400 degrees for 6 minutes. (If you don’t have an air fryer, follow the directions on the package for the oven.)
Whisk all the ingredients for the dressing together in a bowl while the chicken is cooking.
In a large bowl add the chopped romaine and the dressing. Evenly coat the lettuce with the dressing. Chop the chicken in bite size pieces. Add in the croutons and chopped crispy chicken and add more dressing if desired. Enjoy!
