Peach and Cherry Crisp

For the fruit mixture:

5 peaches, sliced

1 1/2 cups pitted fresh cherries

1/3 cup brown sugar

2 tbsp. maple syrup

1 tbsp. vanilla

3/4 tsp. cinnamon

1/2 tsp. nutmeg

3 tbsp. cornstarch

Crisp Topping:

3/4 cup softened butter

1 cup gluten free flour

3/4 cup brown sugar

1 1/2 cups quick cooking oats

1 1/2 tsp. cinnamon

In a large bowl mix together the cherries, peaches, brown sugar, maple syrup, and vanilla. In a small bowl mix the nutmeg, cinnamon, and cornstarch. Add the dry ingredients into the fruit and mix well. In a greased 8 x 12 pan evenly spread the fruit mixture. In another bowl mix together the flour, oats, brown sugar, and cinnamon until well combined. Cut the softened butter into small cubes. Put the cubes in the flour mixture. With your fingers or a pastry blender incorporate the butter into the flour so it forms a crumble. When it is all well mixed, top the fruit mixture with the crisp topping. Bake at 350 degrees for 40-45 minutes. Allow it to cool and serve a la mode.
