Bacon Ranch Chicken Salad
For Salad
1 rotisserie chicken, chopped
1 tomato, chopped
1/2 cup sliced green onion, chopped
1/4 cup chopped celery, chopped
1/2 lb. of bacon, chopped
For Ranch Dressing
1/2 cup DF yogurt
1/2 cup mayo
1 tbsp. fresh chives
1 tbsp. fresh parsley
1 tbsp. fresh dill
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. salt
1 tsp. pepper
1-2 tbsp. white vinegar (depending on how tangy you like it)
Mix all the ingredients for the ranch in a small bowl. Mix until well combined. Set aside.
In a large bowl add in the chopped chicken, tomato, green onion, celery, and bacon. Mix well. Add in the ranch dressing and evenly coat the chicken and vegetables. Eat by itself or on your favorite gluten free bread.
